Red Lion Restaurant at Peak Edge Hotel to host exclusive Wine Journey series
  • The historic Red Lion Restaurant, at Peak Edge Hotel and just eight miles from Chatsworth House, is kicking off a series of Wine Journey evenings on November 9th.
  • The limited series of dinners with wine pairings will be hosted by suppliers, wine makers and wine educators, who will take attendees on vinous journeys across the globe, sharing their expert knowledge in a light-hearted, relaxed fashion.
  • Chapter I of the limited series starts with a focus on Spain, with Martin Paul Abell, Spanish wine expert, and Peter Fawcett, from York fine wine supplier Field and Fawcett, guiding attendees through a remarkable selection of wine from across the country.
  • The evening is priced at £65 per head, and includes a welcome drink followed by four wine tastings paired with four courses from the Red Lion’s kitchen.

On Wednesday November 9th, the historic Red Lion Restaurant at Peak Edge Hotel, just eight miles from Chatsworth House, is introducing the ‘Wine Journeys’ series.

The limited series of dinners with wine pairings will be hosted by suppliers, wine makers and wine educators, who will take attendees on vinous journeys across the globe, sharing their expert knowledge in a light-hearted, relaxed fashion.

The first chapter in the series takes attendees to the wonderfully unique and diverse Spain, with guests Martin Paul Abell and Peter Fawcett representing the region.

Martin`s professional journey is rooted in hospitality, the wonderful world of wines, and the UK.

After studying International Hospitality Management at Leeds Metropolitan University, he went on to work his way up to top managerial positions at Laurent Perrier Champagne and Marques de Riscal, Bodega Pirineos and Bodegas Luis Alegre.

Now relocated to his native Spain, Martin represents various projects in the Spanish wine landscape. These include Terra de Falanis, a union of likeminded winemakers in Mallorca, that focus on indigenous grape varietals with a sense of place, and Bodegas Mitarte, who cultivate 40 acres of old vine in the Rioja Alavesa, to produce superb expressions of quintessential Rioja classics, intertwining tradition and experience with modern techniques.

Both of these wineries and the provinces where they operate (Mallorca, Catalayud, Penedés, Rioja, Alicante) are focuses of the evening.

Joining Martin is Peter Fawcett, Head Honcho at Field and Fawcett, near York, and one of the most reputable wine experts in the North with almost 40 years of experience in all aspects of the wine business.

Peter worked his way up from delivery driver to shop assistant and finally management, for some of the biggest names in the UK wine trade, spending the 1989/1990 vintage with the famous Hunter`s Wines in Marlborough, New Zealand, and successfully completing his WSET Diploma studies in 1995.

He then set up his own company, Field and Fawcett, a wine shop and delicatessen, together with his wife Cathryn in 2005 with the aim of providing fine beverages and food, alongside outstanding customer service. Field and Fawcett have expanded and become a much loved and trusted supplier of wine, artisan beers, and spirits to some of the finest hotels, restaurants, and bars, including Peak Edge Hotel.

The menu, priced at £65 per head, includes four glasses of hand-selected wines, paired to four-courses developed by the Red Lion Restaurant to perfectly complement each serve.

The evening starts at 6:45pm, concluding at 11pm, with canapés and a drink upon arrival.

Options on the menu include Local Brown Trout, with Watercress Gel, Gooseberry, and Endive, and Cannon of Walton Lodge Lamb, with Sweet Breads, Braised Salsify, Romesco, and Lamb Jus.

The four-course meal draws upon produce from the restaurant and hotel owner Steve Perez’s own Walton Lodge Farm, utilising ingredients and flavours from the Peak District that perfectly highlight the intricacies of the chosen wine.

Red Lion Restaurant Food & Beverage Manager Adrian Tinis is organising the series of events through his network of suppliers, wine makers, and wine educators. He’s currently completing sommelier certificates.

The Red Lion Restaurant is the Peak Edge’s 2 AA Rosette awarded restaurant, providing a relaxed space to eat and drink. The kitchen celebrates the food culture of the Peak District, using local and seasonal produce supplied by the owner’s farm Walton Lodge, to create fantastic, simple, yet passionate dishes.
