Derby College Students Experience Life At The Ritz

Two Catering and Hospitality students at Derby College have celebrated finishing their study programme by completing a week’s work experience in the kitchens of The Ritz London.

Holly Rawlinson (19) from Chellaston and Sophie Brassington (19) from Normanton were originally part of a group of level three students, based at the College’s Engine Shed training kitchens at the Roundhouse, who spent the day seeing behind the scenes at the world renowned hotel five-star hotel in Piccadilly.

Holly and Sophie so impressed the chefs that they were invited to do work experience at the hotel kitchens – learning vital preparation and plating up skills.

Sophie, who works as a pastry chef at the Cathedral Quarter Hotel in Derby, said: “It was an amazing experience.  We both learnt so much and it was incredible to work with some very different ingredients including rare mushrooms and fish I had never worked with before.”

Holly, who currently works part time at George’s Traditional in Chellaston, continued: “We were looked after very well and didn’t feel out of our depth thanks to the experience we had gained at College.

“I had been planning to go back to The Ritz London and take them up on the offer of going for a trial and interview for a job.

“However, I think I need to get some more experience closer to home first.  The great thing is that they have said the door is always open to apply in a few years’ time.”
